Cottage cheese banana strudel


I love, love, LOVE this recipe! Not only it is so yummy, but I would consider it as a very healthy option for those bad times when you crave something sweet. And also, the dough is really simple to make. The traditional recipe goes with apples, raisins and cinnamon, but for us, the lazy people of the world, the banana version is more suitable - includes less peeling. :)

Ingredients:
- flour
- cottage cheese
- banana
- raisins
- cinnamon










Mix the cottage cheese with flour, 1 portion of flour should equal 1 portion of cottage cheese - if the dough is too wet, add more flour, but the 1:1 ration works fine for me. Roll the dough, you want it to be approx 3 to 4mm thin and you want it to be as close to the rectangle shape as possible, because you are going to fold it later. Add any filling you desire - in my case the banana, raisins and cinnamon. 



Fold the lengthwise sides over the filling, then fold the unfolded ends too. 

I usually bake it for 175° C for approx 40 min, but this may differ - your strudel is done, when it is golden-brown.
