When I was on my birthday trip to London, I tried to eat on budget and I haven't tried many "traditional British food", however, when it comes to sweets....one does not simply resist! I spent so much money on those damn cookies! I was able to go shopping to Sainsbury's and buy 3 packs (5 cookies each) and eat one pack on way back from the shop (and another one when I came home!). No wonder why so many British people fight obesity, I would suffer from cookie overdose too, if I had chance to stay there bit longer! When I got back to Prague, I craved those damn cookies so bad that I decided to bake some. I tried to recreate 3 versions of my most favourite cookies - white chocolate version, smarties version and milk chocolate version.
These cookies became my favourite cheat day breakfast, however I must warn you before we get to the recipe - they are extremely addictive and also quite a caloric bomb. Not suitable for weight loss at all! :)
All the recipes are pretty much the same when it comes to baking a dough preparation, they differ only in ingredients. The dough making process itself is very simple - mix dry ingredients (flour and sugar) together, then add room temperature butter and condensed milk and work with the mixture until you end up with smooth dough. Then add chocolate (I used cheap chocolate and chopped it in pieces - however, I had better results when I used more expensive chocolate such as Milka) or smarties and distribute it evenly in the dough.
Divide the dough into same sized balls and flatten these on baking sheet. The size certainly matter, as you can see on my white chocolate cookies - they were too big and I had to bake them bit longer and they ended up being bit crunchy, which is not the result we want. I would recommend going with palm-sized cookies, that is probably best size to bake it enough and evenly while preserving the chewiness of the cookie too.
I usually bake my cookies for 25 minutes on 170°C, however, if you see them turning brown, take them out even sooner - you don't want the crunchy effect! :) You generally want them to be baked just enough to stay chewy in the centre.
